CARROT CAKE WITH MARZIPAN TOPPING

INGREDIENTS......
         Grated carrot           One cup
         All purpose flour      Two cup
         Sugar.                        Two cup
          Eggs.                        Four
         Vegetable oil.            11/2 cup
          Salt.                           1/2tbs
         Grated walnut.            1/2cup
          Cinnamon powder.     1tbs
          Raisins.                       20 -25
Carrot cake        
For MARZIPAN
  Cashewnut.                  100g
  Sugar powder.              100gm
  White part of egg.          One
  Rose water and one drop almond essence
Marzipan is a confection consisting primarily of sugar or honey and almond meal, sometimes augmented with almond oil or extract.
Mix all the above ingredients well to make smooth paste.

METHOD.........

  • Take oil and sugar in a bowl and mix well .
  • Add eggs and stir .
  •  Then add vanilla essence and carrot and mix .
  •  Keep this mixture aside.
  • Take all purpose flour ,salt and baking powder and mix.
  • Add walnut ,raisins and cinnamon powder.
  • Now add this mixture to above prepared mixture and mix.
  • Then make the round cake shape and keep in preheated oven at 180 degree for 40 -45 min.
  • Now top with Marzipan ..
Now the dellicious carrot cake is ready to eat.
